INGREDIENTS -1 cup long-grain white rice -2 tablespoons olive oil -2 cloves garlic, minced -1 teaspoon ground cumin -1 cup tomato sauce --2 cups chicken stock (or vegetable stock for a vegetarian version) -Salt and pepper to taste -Chopped fresh parsley or cilantro for garnish (optional) -1 pound ground beef -1 small onion, finely chopped -1 packet taco seasoning mix -1 cup enchilada sauce (store-bought or homemade) -2 tablespoons unsalted butter -2 tablespoons all-purpose flour -1 cup milk (whole milk is best, but you can use 2% or skim if preferred) -2 cups shredded cheddar cheese (or your preferred cheese) -Salt and pepper to taste
