Varenyky are one of the most popular traditional dishes of Ukrainian cuisine. They are made with a variety of fillings. The dough for them is very elastic and does not dry out, and requires a minimum of ingredients. Recipe for dumplings with sauerkraut. Ingredients: Dough: Water (boiling water) - 200 ml. Sunflower oil - 3 tablespoons. Wheat flour - 400 g. Salt - 0.5 teaspoon. Filling: Sauerkraut - 300 g. Spices to taste (coriander, nutmeg, pepper mixture). Sour cream for serving - 3 tbsp. Cooking process: Pour boiling water into a deep bowl, add two tablespoons of sunflower oil and a spoonful of salt. Sift the flour into a bowl of water and start kneading with a spoon until the dough has cooled down so that you can knead it with your hands. Knead the dough until it stops sticking to your hands. Leave the dough to proof. Meanwhile, put sauerkraut in a frying pan with hot oil and fry for 20 minutes over low heat. Season the filling with salt and pepper to taste. Roll out the dumpling dough into a thin layer and cut out identical circles with a glass. Put the filling in the center of the dumplings and make dumplings. Bring water to a boil in a large saucepan. Cook the dumplings in the pot until they float to the surface. It is recommended to serve the dumplings with sour cream and fried onions. You can also garnish with herbs.
